i went a little out of control yesterday and made a few treats. the first was a homemade strawberry cake which came out AMAZINGLY well. i really cannot believe that i ever attempted to mix anything without a kitchenaid mixer. crazy talk.
this next little gem was a totally off-chance find on allrecipes. no, it's not little turds, SCOTT. it's called irish potato candy. it's essentially cream cheese and coconut with a little bit of vanilla and butter. you shape them and roll them in cinnamon and they are heavenly. the recipe made about a zillion, so if you want some, please come get them. :)
i made the strawberry cake for my job's may birthday celebration and i was just barely able to save two pieces for scott and i. total hit. scott is all about the potato candy, so i think i'm going to send most of them to work with him. they're good but MAN are they rich. i think next time i'll let everything freeze before i try to shape it. less turd-like that way.
