so much work to throw a party

today was scott's birthday and my idiot self thought it would be awesome to throw him a surprise party. the concept was awesome, but i have been on my feet for 12+ hours. started out this morning when i had to do all the cooking that i neglected to do last night.
wah wahhhh.

i also tried to do the adorable mini caramel apples, and let me just say: &#@$ THAT IDEA.
i bought a melon baller and scooped out pieces from 6 apples. they looked cute and i even lemon'd them up to stop the browning. perfect. i dried them and put them in the fridge until i was ready. got them out of the fridge. DRIED EACH ONE BY HAND. let them sit for awhile and warm up. DRIED THEM AGAIN. heated up the caramel and started the process of jamming the toothpicks in, dipping them, and placing them in the sprayed cups. they looked freaking adorable and i was so proud. so i set them out to dry while i'm doing some other stuff, and go back to them about 10 minutes later. upon attempting to remove the apple from the paper cup the caramel isn't sticking to anything but the cup. panic sets in b/c these bastards have taken me the better part of an hour just to prep. so my sister says "stick them in the freezer, and that will help them adhere." okay, fine. put them in the "fix it freezer". take them out 10 minutes later and not only is the caramel still not sticking, but it's rock hard. set them out on the table to warm up and see if that helps.
let's just say i made 61 apple pieces and ended up throwing away like 58 of them. as they warmed up they got watery which made them look revolting. never again.
but in food news that ruled, i made a variation of fruit salsa and homemade cinnamon chips that was spectacular and my new favorite appetizer. expect it at every party i attend for the next year.

in other news, the party was a huge hit and we had tons of people so it was two thousand percent worth it. a huge giant thank you to stefanie and alaina for coming over and helping me with the ridiculousness - you are angels and i couldn't have done it without you.
